Ingredients

  • 1 (8 oz) can crushed pineapple
  • 1/4 C. dry coconut flakes (optional)
  • 1/2 C. finely shredded For You® Carrots
  • 1/2 C. raisins
  • 1 (8 oz) package cream cheese
  • 1/2 of an 8 oz package light cream cheese
  • 1/3 C. sugar
  • 1/2 tsp. ginger (powdered works best here)
  • 1/2 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 1 C. graham cracker crumbs

Instructions

  1. Drain a small can of crushed pineapple, and soak up excess juice with paper towel. Set aside.
  2. Mix your dry ingredients and toss in the carrots and raisins. Mix the pineapple, coconut, vanilla, and cream cheeses. Add dry ingredients, form into a ball and roll in graham cracker crumbs.
  3. Serve with graham cracker, carrot sticks, or even on its own.
