and Turnip Soup

Ingredients

  • This is a very easy and quick dish to make. You can serve it over quinoa or brown rice and with a salad for a complete protein plant based meal.

    • 1 T. olive or coconut oil
    • 2 cloves of garlic (1 tsp. minced)
    • onion (small/medium) chopped
    • 1 medium sized turnip peeled and cubed
    • 1/2 tsp. sea salt
    • 1 C. red lentils
    • 1-2 T. madras curry powder
    • 3 1/2 C. water or broth
    • 1 T. tomato paste
    • 1 can full fat coconut milk
    • 1/2 lemon juiced

Instructions

  1. Heat oil in medium sized sauce pan or pot.
  2. Saute garlic and onions until soft then add cubed turnip and stir.
  3. Add lentils and curry powder and salt to coat.
  4. Add water or broth and cook 30-40 minutes until lentils are soft.
  5. Add tomato paste and cook another 5-10 minutes.
  6. Stir in coconut milk and lemon juice. Add salt to taste.

    Miedema Produce began in 1971 when brothers Gerald and Ron Miedema raised their first crops in Jenison, Michigan. The duo learned from their father, Ted, who had farmed in the Netherlands, immigrated to the United States, and used his vegetable growing expertise to make his start in the United States.
