Ingredients

  • 4 T. butter
  • 1 bunch scallions, sliced
  • 4 C. cubed For You® Parsnips
  • 1/4 C. white wine
  • 2 C. broth
  • 2 comice pears, chopped
  • 1/2 C. heavy cream
  • Salt and pepper

Instructions

  1. In large saucepan, melt butter.
  2. Add scallion whites and parsnips; cook 8 minutes.
  3. Add wine, broth and 1 1/2 cups water; bring to simmer.
  4. Reduce heat and cook 8 minutes
  5. Add pears and cook 10 minutes
  6. Puree with cream; season and top with scallion greens.
