Avocado & Blueberry Salad

Ingredients

  • • 2 T. honey
  • • 1/4 C. plain nonfat yogurt
  • • 1/2 tsp. ground cinnamon
  • • 1/4 C. fresh orange juice
  • • 1/8 tsp. each salt and pepper
  • • 1 large, ripe avocado, peeled and cut in slices
  • • 2 C. fresh apple; peeled, cored, seeded, diced
  • • 2 C. fresh mango, diced
  • • 2 C. fresh For You® Blueberries, rinsed and drained
  • • 1 5-oz package or 8 cups of For You® Salad Greens
  • • 2 T. chopped chives or green onion
  • • 2 T. walnuts, toasted, chopped coarsely

Instructions

Creamy avocado, sweet ForYou® blueberries, and a tangy vinaigrette make this salad an unexpected favorite — the kind of dish guests ask about. Add greens, nuts, and a soft cheese for a more substantial plant-based meal. Comes together in 15 minutes.

  • 2 T. honey
  • 1/4 C. plain nonfat yogurt
  • 1/2 tsp. ground cinnamon
  • 1/4 C. fresh orange juice
  • 1/8 tsp. each salt and pepper
  • 1 large, ripe avocado, peeled and cut in slices

1. Whisk together all dressing ingredients, set aside.
2. Place avocado slices, apple, mango and blueberries in a medium bowl and toss with 1/4 cup of dressing.
3. Toss salad greens in large bowl with remainder of dressing, and distribute evenly on each of six salad plates.
4. Place an equal portion of the fruit/avocado mixture on top of each greens serving.
5. Sprinkle with chopped chives and toasted walnuts to serve.

Our Humble Beginning

Miedema Produce began in 1971 when brothers Gerald and Ron Miedema raised their first crops in Jenison, Michigan. The duo learned from their father, Ted, who had farmed in the Netherlands, immigrated to the United States, and used his vegetable growing expertise to make his start in the United States.

Miedema Produce began growing bright and crisp radishes, which is now our hallmark product being grown and produced today. Miedema Produce has since become one of the largest growers and shippers of radishes in the world.
