Mashed Sweet Potatoes and Turnips

Ingredients

  • • 1 medium sweet potato, peeled and cut into 2″ pieces
  • • 1 medium For You® Turnip, peeled and cut into 2″pieces
  • • 1 T. canola oil
  • • 1/2 C. diced For You® Onion
  • • 1/4 C. finely diced Italian parsley
  • • Salt and pepper to taste
  • • 1/4 C. shredded reduced fat Swiss or Gruyére cheese

Instructions

Sweet potatoes and ForYou® turnips combine for a mash that’s sweet, savory, and a little earthy — a fall and winter side that pairs with everything from roast chicken to grilled steak. A pat of butter and a scattering of herbs is all the finish it needs.

  • 1 medium sweet potato, peeled and cut into 2″ pieces
  • 1 medium For You® Turnip, peeled and cut into 2″pieces
  • 1 T. canola oil
  • 1/2 C. diced For You® Onion
  • 1/4 C. finely diced Italian parsley
  • Salt and pepper to taste
  • 1/4 C. shredded reduced fat Swiss or Gruyére cheese

1. In large pot, place steamer filled with potatoes and turnips. Add 2 cups water, cover and bring to boil. Steam until tender, about 15 minutes.
2. Meanwhile, in small skillet, sauté onion and parsley over medium heat in oil for 5 minutes.
3. In large bowl, place tender potatoes and turnips and mash with large fork. Stir in onion, parsley and oil from pan. Season mixture to taste with salt and pepper.
4. Lightly coat baking dish with oil spray and add potato mixture, pressing down evenly.
5. Top with cheese and broil for 2-3 minutes or until cheese is bubbly and lightly browned.

Our Humble Beginning

Miedema Produce began in 1971 when brothers Gerald and Ron Miedema raised their first crops in Jenison, Michigan. The duo learned from their father, Ted, who had farmed in the Netherlands, immigrated to the United States, and used his vegetable growing expertise to make his start in the United States.

Miedema Produce began growing bright and crisp radishes, which is now our hallmark product being grown and produced today. Miedema Produce has since become one of the largest growers and shippers of radishes in the world.
