Savory Vegetable and Beef Stew

Ingredients

  • • 1/2 C. all-purpose flour
  • • 1 lb beef chuck roast, cut into 1″ cubes
  • • 3 T. vegetable oil, divided
  • • 1 large turnip, peeled and cut into 1″
  • • 3 medium stalks of celery, sliced 1″ thick on the diagonal
  • • 5 medium carrots, peeled and sliced 1″ thick on the diagonal
  • • 1 large russet potato, peeled and cut into 1″ chunks
  • • 2 medium parsnips, peeled and sliced 1″ thick on the diagonal
  • • 3 cloves garlic, minced
  • • 2 T. tomato paste
  • • 7 C. beef broth
  • • 1 tsp. cornstarch dissolved in 1 T. of cold water
  • • 1/4 C. chopped fresh parsley
  • • salt and pepper to taste

Built around ForYou® carrots, parsnips, turnips, and celery, this beef stew is everything you want on a cold day — meat that falls apart on a fork, vegetables that hold their shape, and a broth thick enough to coat a piece of crusty bread. Best made a day ahead so the flavors deepen.

  • 1/2 C. all-purpose flour

  • 3 T. vegetable oil, divided
  • 1 large turnip, peeled and cut into 1″
  • 3 medium stalks of celery, sliced 1″ thick on the diagonal
  • 5 medium carrots, peeled and sliced 1″ thick on the diagonal
  • 1 large russet potato, peeled and cut into 1″ chunks
  • 2 medium parsnips, peeled and sliced 1″ thick on the diagonal
  • 3 cloves garlic, minced
  • 2 T. tomato paste
  • 7 C. beef broth
  • 1 tsp. cornstarch dissolved in 1 T. of cold water
  • 1/4 C. chopped fresh parsley
  • salt and pepper to taste

1. Place the flour in a shallow dish such as a pie plate and season with salt and pepper. Season the beef with salt and pepper, then dredge in the flour, shaking to remove the excess.
2. Place a large stock pot over medium-high heat. Add the 1 1/2 tablespoons oil followed by half of the beef. Cook the beef, browning on all sides, about 10 minutes in total. Transfer the beef to a plate and repeat with the remaining 1 1/2 tablespoons of oil and the other half of the beef. Transfer the remaining beef to the plate with the rest.
3. Add the turnip, celery, carrot, potato, parsnip, garlic, and tomato paste to the pan and cook, stirring frequently for 3 minutes. Pour in the broth, then stir in the cornstarch-water mixture. Season the broth with salt and pepper. Increase the heat to high and bring to a boil, then reduce to low and simmer until the beef becomes tender, stirring occasionally, about 40 minutes.
4. Ladle into bowls, sprinkle with parsley, and serve.

Our Humble Beginning

Miedema Produce began in 1971 when brothers Gerald and Ron Miedema raised their first crops in Jenison, Michigan. The duo learned from their father, Ted, who had farmed in the Netherlands, immigrated to the United States, and used his vegetable growing expertise to make his start in the United States.

Miedema Produce began growing bright and crisp radishes, which is now our hallmark product being grown and produced today. Miedema Produce has since become one of the largest growers and shippers of radishes in the world.
