Ingredients

  • • 3/4 lbs (about 20) shelled medium-size shrimp, boiled or grilled
  • • 1 C. fresh For You® Blueberries
  • • 1/2 C. toasted walnut pieces
  • • 1/2 C. edamame or green peas, cooked
  • • 5 oz (about 4 C.) mixed For You® Salad Greens
  • • Lemon Vinaigrette (recipe follows)
  • • 2 oz (about 1/2 C.) firm white cheese, such as feta, crumbled

Instructions

This keto-friendly salad pairs sweet ForYou® blueberries with seared shrimp over greens, finished with a tangy vinaigrette. It sounds unexpected, but it works — the sweetness of the berries balances the brininess of the shrimp beautifully. Comes together in 20 minutes for a smart, light lunch or dinner.

  • 3/4 lbs (about 20) shelled medium-size shrimp, boiled or grilled

  • 1/2 C. edamame or green peas, cooked
  • 5 oz (about 4 C.) mixed For You® Salad Greens

1. In a large salad bowl, toss shrimp, blueberries, walnut pieces, edamame or peas and salad greens.
2. Evenly divide salad onto six plates; drizzle with Lemon Vinaigrette.
3. Sprinkle cheese around edges of salad.
4. Lemon Vinaigrette: In a small mixing bowl, whisk 1/4 cup vegetable oil, 2 tablespoons lemon juice, 1 teaspoon sugar, 1/8 teaspoon salt, 1/8 teaspoon coarsely ground black pepper, and 1/8 teaspoon ground red pepper.

Our Humble Beginning

Miedema Produce began in 1971 when brothers Gerald and Ron Miedema raised their first crops in Jenison, Michigan. The duo learned from their father, Ted, who had farmed in the Netherlands, immigrated to the United States, and used his vegetable growing expertise to make his start in the United States.

Miedema Produce began growing bright and crisp radishes, which is now our hallmark product being grown and produced today. Miedema Produce has since become one of the largest growers and shippers of radishes in the world.
