Ingredients

  • • 1 T. freshly squeezed lemon juice
  • • 1 T. raw, unfiltered apple cider vinegar
  • • 1 T. extra virgin olive oil
  • • sea salt and freshly ground black pepper
  • • 2 medium sized For You® Beets, peeled and sliced into matchstick sized pieces, (1 1/2 cups)
  • • 1 bag For You® Radish MatchStixx™
  • • 2 pieces For You® Red Leaf Lettuce, cleaned and dried

Instructions

Earthy beets and peppery ForYou® radishes make a vivid, jewel-toned salad that’s as pretty as it is fresh. A simple vinaigrette and a handful of fresh herbs is all it needs. Plant-based, vegetarian, and a great starter for a dinner party or a vibrant side for any roast.

  • 1 T. freshly squeezed lemon juice
  • 1 T. raw, unfiltered apple cider vinegar
  • 1 T. extra virgin olive oil
  • sea salt and freshly ground black pepper
  • 2 medium sized For You® Beets, peeled and sliced into matchstick sized pieces, (1 1/2 cups)
  • 1 bag For You® Radish MatchStixx™
  • 2 pieces For You® Red Leaf Lettuce, cleaned and dried

1. To make the vinaigrette, mix the lemon juice, apple cider vinegar, olive oil, salt and pepper.
2. Place the sliced beets and radishes in a bowl and toss together with the vinaigrette.
3. Place the lettuce on two small plates.
4. Spoon the beets and radishes over each lettuce leaf.
5. Serve immediately or if you want to make ahead, mix the beets and radishes with the vinaigrette, cover and refrigerate.

Our Humble Beginning

Miedema Produce began in 1971 when brothers Gerald and Ron Miedema raised their first crops in Jenison, Michigan. The duo learned from their father, Ted, who had farmed in the Netherlands, immigrated to the United States, and used his vegetable growing expertise to make his start in the United States.

Miedema Produce began growing bright and crisp radishes, which is now our hallmark product being grown and produced today. Miedema Produce has since become one of the largest growers and shippers of radishes in the world.
