Ingredients

  • • 1 (8 oz) can crushed pineapple
  • • 1/4 C. dry coconut flakes (optional)
  • • 1/2 C. finely shredded For You® Carrots
  • • 1/2 C. raisins
  • • 1 (8 oz) package cream cheese
  • • 1/2 of an 8 oz package light cream cheese
  • • 1/3 C. sugar
  • • 1/2 tsp. ginger (powdered works best here)
  • • 1/2 tsp. nutmeg
  • • 1 tsp. cinnamon
  • • 1 tsp. vanilla
  • • 1 C. graham cracker crumbs

Instructions

A playful twist on the classic cheeseball, this version uses ForYou® carrots, cream cheese, and warm spices to taste like carrot cake in dippable form. Roll it in chopped pecans, plate it with graham crackers or apple slices, and watch it disappear at your next gathering. It comes together in about 20 minutes and chills until you're ready to serve.

  • 1 (8 oz) can crushed pineapple

  • 1 (8 oz) package cream cheese
  • 1/2 of an 8 oz package light cream cheese

  • 1 C. graham cracker crumbs

1. Drain a small can of crushed pineapple, and soak up excess juice with paper towel. Set aside.
2. Mix your dry ingredients and toss in the carrots and raisins. Mix the pineapple, coconut, vanilla, and cream cheeses. Add dry ingredients, form into a ball and roll in graham cracker crumbs.
3. Serve with graham cracker, carrot sticks, or even on its own.
