Vegetable Barley Soup with Tomato Broth

Ingredients

  • • 2 T. butter
  • • 1/2 large onion, medium diced
  • • 1 medium turnip, peeled and cut into a medium dice
  • • 2 small parsnips, peeled, quartered lengthwise, then sliced 1/4″ thick
  • • 2 medium stalks celery, medium diced
  • • 3 medium carrots, peeled, quartered lengthwise, then sliced 1/4″ thick
  • • 2 cloves garlic, minced
  • • 1 (6 oz) can tomato paste
  • • 1 C. pearled barley
  • • 8 C. chicken or vegetable broth, or more as needed
  • • 1 T. lemon juice
  • • 3/4 C. lightly packed basil leaves, thinly sliced into ribbons
  • • salt and pepper to taste

Hearty barley anchors this vegetable soup, while a tomato-based broth ties together ForYou® carrots, parsnips, turnips, onions, and celery. It’s a one-pot vegetarian meal that gets better the next day — pack it for lunch or freeze portions for later.

  • 2 T. butter
  • 1/2 large onion, medium diced

  • 2 small parsnips, peeled, quartered lengthwise, then sliced 1/4″ thick
  • 2 medium stalks celery, medium diced
  • 3 medium carrots, peeled, quartered lengthwise, then sliced 1/4″ thick
  • 2 cloves garlic, minced
  • 1 (6 oz) can tomato paste
  • 1 C. pearled barley
  • 8 C. chicken or vegetable broth, or more as needed
  • 1 T. lemon juice
  • 3/4 C. lightly packed basil leaves, thinly sliced into ribbons
  • salt and pepper to taste

1. Place a large saucepan over medium heat. Add the butter followed by the onions and cook until they begin to soften. Add the turnip, parsnips, celery, carrots, salt, and pepper, then cook, stirring occasionally, for 6 minutes more. Add the garlic and tomato paste.
2. Cook, stirring frequently, for 2 minutes more.
3. Add the barley, broth, salt, and pepper. Bring to a boil, then reduce to a simmer and cook until the barley becomes tender, adding more broth if needed during the cooking process, about 40 minutes.
4. Stir in the lemon juice and ladle into bowls.
5. Top with fresh basil, then serve.

Our Humble Beginning

Miedema Produce began in 1971 when brothers Gerald and Ron Miedema raised their first crops in Jenison, Michigan. The duo learned from their father, Ted, who had farmed in the Netherlands, immigrated to the United States, and used his vegetable growing expertise to make his start in the United States.

Miedema Produce began growing bright and crisp radishes, which is now our hallmark product being grown and produced today. Miedema Produce has since become one of the largest growers and shippers of radishes in the world.
