Blueberry Waffles with Blueberry Sauce

Ingredients

  • • 3 egg yolks, beaten
  • • 1 2/3 C. milk
  • • 2 C. all-purpose flour
  • • 2 1/4 tsp. baking powder
  • • 1/2 tsp. salt
  • • 1/4 C. melted butter
  • • 3 egg whites, stiffly beaten
  • • 2/3 cup For You® Blueberries
  • • 1 1/2 C. For You® Blueberries
  • • 3 T. honey
  • • 1/2 C. orange juice
  • • 1 T. cornstarch

Instructions

These ForYou® blueberry waffles double down — blueberries in the batter and a warm blueberry sauce poured over the top. Crisp on the outside, fluffy on the inside, and just sweet enough to skip the syrup. Best served right out of the iron with butter melting between the squares.

  • 3 egg yolks, beaten
  • 1 2/3 C. milk
  • 2 C. all-purpose flour
  • 2 1/4 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 C. melted butter
  • 3 egg whites, stiffly beaten
  • 2/3 cup For You® Blueberries
  • 1 1/2 C. For You® Blueberries
  • 3 T. honey
  • 1/2 C. orange juice
  • 1 T. cornstarch

1. In a medium bowl, whisk together egg yolks and milk. Stir in flour, baking powder and salt. Stir in butter, and set mixture aside for about 30 minutes.
2. Preheat a lightly greased waffle iron.
3. Fold egg whites and 2/3 cup blueberries into the mixture. Scoop portions of the mixture into the prepared waffle iron, and cook until golden brown.
4. To prepare the sauce, in a medium saucepan over medium heat, mix 1 1/2 cups blueberries, honey and 1/4 cup orange juice. Bring to a boil. Mix remaining orange juice and cornstarch in a small bowl, and stir into the blueberry mixture. Stir constantly until thickened. Serve warm over waffles

Our Humble Beginning

Miedema Produce began in 1971 when brothers Gerald and Ron Miedema raised their first crops in Jenison, Michigan. The duo learned from their father, Ted, who had farmed in the Netherlands, immigrated to the United States, and used his vegetable growing expertise to make his start in the United States.

Miedema Produce began growing bright and crisp radishes, which is now our hallmark product being grown and produced today. Miedema Produce has since become one of the largest growers and shippers of radishes in the world.
