Ingredients

  • • 48 For You® Red Radishes, trimmed and halved
  • • 2 For You® Onions, chopped
  • • 5 1/2 C. chicken stock or broth
  • • 6 T. butter
  • • 6 T. all-purpose flour
  • • 4 C. half and half
  • • 6 T. Worcestershire sauce
  • • 1 tsp. salt
  • • 1/2 tsp. ground black pepper
  • • 1 T. prepared horseradish
  • • 2 T. mayonnaise

Instructions

This creamy keto soup turns ForYou® radishes and onions into something unexpectedly luxurious — silky, rich, and a beautiful pale-rose color. It serves a crowd (12 to 14 bowls) and freezes well, so make the full batch and stash extras for later. Garnish with a swirl of cream and chopped chives.

  • 48 For You® Red Radishes, trimmed and halved
  • 2 For You® Onions, chopped
  • 5 1/2 C. chicken stock or broth
  • 6 T. butter
  • 6 T. all-purpose flour
  • 4 C. half and half
  • 6 T. Worcestershire sauce
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper
  • 1 T. prepared horseradish
  • 2 T. mayonnaise

1. In large saucepan, combine radishes, onions and chicken stock or broth.
2. Bring to a boil. Reduce heat and simmer 35 minutes. Remove from heat and cool slightly.
3. In food processor, puree mixture. Set aside.
4. In large saucepan or Dutch oven, melt butter. Whisk in flour and cook, stirring, 1 minute.
5. Add half and half and cook, stirring, until thickened, about 5 minutes.
6. Whisk in Worcestershire sauce, salt, pepper, horseradish and mayonnaise. Add pureed radishes.
7. Heat through.
8. Can be held in slow cooker several hours if necessary.

Our Humble Beginning

Miedema Produce began in 1971 when brothers Gerald and Ron Miedema raised their first crops in Jenison, Michigan. The duo learned from their father, Ted, who had farmed in the Netherlands, immigrated to the United States, and used his vegetable growing expertise to make his start in the United States.

Miedema Produce began growing bright and crisp radishes, which is now our hallmark product being grown and produced today. Miedema Produce has since become one of the largest growers and shippers of radishes in the world.
