Shrimp Canapes with Radishes and Heart of Palm

Ingredients

  • • 4 hearts of palm (1″ diameter), rinsed and cut into 1/4″ thick coins (you’ll need 24)
  • • 2 T. plus 1/4 tsp. fresh lime juice
  • • 2 T. olive oil
  • • pinch of sugar
  • • 2 T. mayonnaise
  • • 1/4 tsp. finely grated lime zest
  • • pinch of cayenne
  • • 24 large peeled and deveined cooked shrimp
  • • 6 large radishes, sliced 1/4-inch thick (you’ll need 24)
  • • 24 fresh cilantro leaves
  • • salt and pepper to taste

Instructions

These elegant little canapés punch above their weight at any gathering. Cool shrimp, crisp ForYou® radishes, and tender hearts of palm come together on a single bite that looks fancier than it is. Assemble them up to an hour ahead and keep chilled until your guests arrive.

  • 4 hearts of palm (1″ diameter), rinsed and cut into 1/4″ thick coins (you’ll need 24)

  • 24 fresh cilantro leaves
  • salt and pepper to taste

1. Arrange the heart of palm slices on a plate and sprinkle with 2 tablespoons of the lime juice, olive oil, sugar, and salt. Set aside to marinate while you prepare the shrimp.
2. In a medium bowl, stir together the remaining 1/4 teaspoon lime juice, mayonnaise, lime zest, cayenne, shrimp, salt, and pepper.
3. Drain the hear of palm slices and paty dry with a paper towel. Place a heart of palm slice on each radish slice. Top with a piece of shrimp and garnish with a cilantro leaf.

Our Humble Beginning

Miedema Produce began in 1971 when brothers Gerald and Ron Miedema raised their first crops in Jenison, Michigan. The duo learned from their father, Ted, who had farmed in the Netherlands, immigrated to the United States, and used his vegetable growing expertise to make his start in the United States.

Miedema Produce began growing bright and crisp radishes, which is now our hallmark product being grown and produced today. Miedema Produce has since become one of the largest growers and shippers of radishes in the world.
