Stuffed Pitas with Radishes and Hummus

Ingredients

  • • 1 tsp. grated lemon rind
  • • 1 (8 oz) container plain hummus
  • • 4 (6″) whole-wheat pitas, halved
  • • 4 green leaf lettuce leaves, halved
  • • 1 1/4 C. thinly sliced English cucumber

  • • 1/3 C. thinly sliced red onion
  • • 1/2 C. crumbled feta cheese
  • • Freshly ground black pepper
  • • Steamed Sugar Snap Peas (recipe below)
  • • salt and pepper to taste
  • • 3 C. fresh sugar snap peas
  • • 1 T. chopped fresh mint or tarragon
  • • 1 T. butter
  • • salt and pepper to taste

Instructions

These stuffed pitas are a quick, vegetarian lunch built around ForYou® radishes, fresh greens, and creamy hummus. The radishes add the crunch and pepper that elevates the whole sandwich from boring to memorable. Pack them for lunch or assemble for an easy dinner — they come together in minutes.

1. Combine rind and hummus. Divide hummus mixture evenly among 8 pita halves (about 1 1/2 tablespoons each).
2. Divide lettuce, cucumber, radishes, onion, and cheese evenly among pita halves. Sprinkle with pepper.
3. Steam peas 5 minutes or until crisp-tender; drain. Combine peas, mint, butter, salt, and pepper; toss well.

Our Humble Beginning

Miedema Produce began in 1971 when brothers Gerald and Ron Miedema raised their first crops in Jenison, Michigan. The duo learned from their father, Ted, who had farmed in the Netherlands, immigrated to the United States, and used his vegetable growing expertise to make his start in the United States.

Miedema Produce began growing bright and crisp radishes, which is now our hallmark product being grown and produced today. Miedema Produce has since become one of the largest growers and shippers of radishes in the world.
